YELLOW TAIL SPICY SOUP (WOKU BLANGA)
Ingredients :
2 pounds yellow tail (or fish of your choice)
1 1/2 cup chopped green onion
1 cup tomato
2 tbsp thai chili (pure)
2 of 2 inches lemon grass
3-5 key lime leafs
1 medium tumeric leaf or 1 tbsp tumeric powder
lemon juice (from 1 large lemon)
2-3 sprigs of asian basil
1 inch ginger (grated)
3 tbsp vegetable oil
salt
This is authentic Manadonese (Indonesian) Food. Marinate fish with lemon
juice and salt about 10-15 minutes before cooking. Combine fish, green onions,chili, lemon grass, ginger,tomato,tummeric
leaf or tummeric powder, key lime leafs, asian basil, vegetable oil. cook in low heat cooking pan/wok and covered. add some water when fish
is about cook until boiling. add salt to taste.
MANADONESE CHICKEN CURRY (AYAM TUTURUGA)
This Manadonese Chicken Curry is the best curry I've ever had. It's not
too strong like Indian curry but also the perfect amount of spices make
it tastier and thickier than Thai curry. Serve with steam white rice is a
perfect match. One of my husband's favorite food.
Ingredients :
1 whole chicken, cut in smaller pieces
4-6 potato (prefered yukon gold potato), cut in 1 inch cube
250 ml Kara coconut milk or from fresh coconut
2 clove garlic
1 tbsp grated ginger
2 tbsp tumeric powder
2 tbsp thai chili
1 cup finely chopped shallot or red onion
1 stalk lemon grass
3-5 key-lime leaf
3 sprigs asian basils
1 pandan leaf 9cut in 3 pieces)
8-10 mint leafs or 3 sprigs mint
1/2 cup Vegetable oil
salt 1/2 cup Vegetable oil
*Puree Spices : Puree garlic, grated ginger, tumeric powder and thai chili in the food proccesor or blender.
Heat vegetable oil in large skillet or wok. add chopped shallot until soft. Add Puree spices, lemon grass, key lime leaf, asian basil and pandan leaf. mixing well. add chicken, mixing, covered and shimmered about 15-20 minutes in low heat. Add potatoes and cook until potato soft about 10 minutes in medium heat. Add coconut milk and mints, keep stiring until the food starting to boil. Serve hot witm steam rice.
Baked Tilapia served w/ Manadonese Salsa aka Dabu-dabu
This meal is pretty simple and healthy. Dabu-dabu is very famous in Manado, Indonesia. Combined Dabu-dabu with fish sauce, called Dabu-dabu Bakasang. Manadonese use this like a dipping with some bake/ grill/ fried fish, or fried banana. Dabu-dabu also good with Manadonese porridge aka Tinutuan.
Ingredients
4 pieces Fillet Tilapia (or fish of your choice)
1/4 cup lemon juice for marinate the fish
1 tbsp lemon juice for dabu-dabu or salsa
2 tbsp chopped shallots
1 cup cherry or grape tomato
1/2 cup puree thai chili
1/2 tbsp vegetable oil.
Salt to taste
Marinate Tilapia with lemon juice and salt about 15 minutes. Baked Tilapia in the oven or pan fried. For Dabu-dabu, combine chopped tomato,chopped shallot, chili (recommended thai chily), lemon juice, vegetable oil,salt.
Pork Ribs Karbonaces
This is Indonesian-Dutch dish. One of my family back home favorite. This is my mom recipe (except adding the red wine, she used vinegar)
Ingredients :
2 pounds Pork ribs (spare ribs or baby ribs), cut smaller to fit in the pan.
1 tbsp Nut Meg
1 tbsp Cinnamon
1 tbsp Clove
1 tbsp black or white pepper
1/2 cup Sweet Soy Sauce (Indonesian Soy Sauce)
1/2 cup brown sugar
1 cup Chopped Shallots/Red Onions
1/4 cup minced garlic
1 cup Red Wine (can substitute to 1/4 cup vinegar)
1/4 cup chili powder (optional)
Mix well all the spices (nutmeg,cinnamon, clove, salt, pepper, chopped garlic, chopped onion, sweet soy sauce) with pork ribs. Cook in dutch oven or roasting pan (covered) at the low heat about 2 hours or until meat fall apart. Keep mixing during cooking to avoid burning on the bottom of pan.
Manadonese Pork Satay (Sate Babi Manado)
Ingredients :
1 cup Thai chili paste or sambal oelek
1/2 cup chopped shallot
3 cloves garlic
1/4 cup grated ginger
1 tsp Salt
1/2 cup vegetable oil
An authentic Manadonese Food. You can substitute the pork to another kind of meat you prefer(but pork is the best). *Mixed Chili: combine all spicies (except vegetable oil) in food proccesor or blender, divided 2 parts. 1 part use for marinate (Mixed chili 1). (Mixed chili 2, heat up vegetable oil on the skillet, add the second part of mixed chili until cook about 3 minutes. Arranged meat on skewer. Marinate using Mixed chili 1. BBQ on the low to medium heat. Put on the serving plate. Topping with Mixed chili 2.
Peanut Dressing Salad (Gado-Gado)
Steam
all vegetables (spinach, water spinach aka kangkung, slices carrots).
Arranged on the plate all steam veggies, slices cucumber, slices hard
boil eggs, rice cakes,bean sprouts, fried tofu. Combined with peanut dressing*. Topping
with fried onions and served with Indonesian chips.
*Peanut dressing (Bumbu Gado-gado).
